STEP
Dough Preparation
Combine dry yeast with 19g water and let sit at room temperature. Mix bread flour, bagel base mix, sugar, salt, honey, ice water, and milk until dough forms. Add activated yeast, mix on low and high speed alternately, then add butter and mix again. Rest for 20 minutes.

Cream Cheese Preparation
Mix cream cheese and powdered sugar, then add heavy cream and combine. Refrigerate.

Dividing the Dough
Divide mochi bagels dough into 10 pieces (85g each) and shape into cylinders. Rest for 25 minutes. Divide remaining bagels bomb dough into 10 pieces (50g each) and shape into balls. Rest for 25 minutes.

Filling the Dough
Roll an 85g bagels dough piece to 18cm, wrap in mochi, and roll to 25cm. Shape into a bagel.
Flatten a 50g bagels bomb dough piece, add 18g cream cheese filling, seal, and shape into a 6cm ball. Spray with water and sprinkle sesame seeds. Proof both doughs at 32°C and 75% humidity for 30 minutes.

Baking
Preheat with steam. Bake bagels for 12 minutes, flip, and bake for 3 more minutes. Bake bagel bombs for 8 minutes, flip, and bake for 2 more minutes.
