Heat butter, powdered sugar, granulated sugar, and trehalose to 50°C until sugars dissolve. Mix well. Stir in egg yolks until combined. Add crispy bake mix, bread flour, baking soda, and each purple sweet potato, chocolate and matcha powder. Mix well and refrigerate.

Divide each purple sweet potato, chocolate and matcha dough into 45g portions, shape into balls, and wrap each with 15g of mochi. Roll them into balls and sprinkle with purple sweet potato powder, chocolate chips and red beans.

Place in a convection oven and bake. Remove immediately upon completion.
